Lebensmittel können regelrechte Nährböden für diese Mikroorganismen sein. Sie sind dann in der Lage, beim Verbraucher verschiedene Erkrankungen zu verursachen. Die mikrobiologische Untersuchung ist ein unverzichtbares Instrument zur Beurteilung des Kontaminationsgrades von Lebensmitteln und der Art ihrer Mikroflora. In dieser bescheidenen Arbeit wurde die mikrobiologische Qualität der gesammelten Lebensmittel durch die Bestimmung des Kontaminationsgrades der gesamten aeroben mesophilen Flora, der Gesamt- und Fäkalcoliforme, Staphylococcus aureus, Hefen und Schimmelpilze sowie durch den Nachweis von Salmonella, Clostridium perfringens und Shigella bewertet.
