Gli studi hanno dimostrato l’efficacia degli antiossidanti naturali per la salute umana, mantenendo il potenziale antiossidante delle cellule. Questi antiossidanti possono agire con diversi meccanismi per inibire o ridurre il tasso di ossidazione, che può essere misurato valutando la loro attività antiossidante. I composti bioattivi, metaboliti secondari prodotti nelle piante, esercitano un’azione antiossidante e sono presenti in un’ampia varietà di frutta e verdura.
