Les antioxydants et leurs effets sur la santé humaine ont pris beaucoup d’importance ces dernières années. Les antioxydants naturels peuvent être endogènes, c’est-à-dire présents dans le corps humain, ou exogènes, c’est-à-dire présents dans des sources extérieures, comme les aliments d’origine végétale, et absorbés par la consommation de ces produits. Des études ont montré l’efficacité des antioxydants naturels pour la santé humaine en maintenant le potentiel antioxydant des cellules. Ces antioxydants peuvent agir par différents mécanismes pour inhiber ou réduire le taux d’oxydation, ce qui peut être mesuré en évaluant leur activité antioxydante. Les composés bioactifs, métabolites secondaires produits par les plantes, exercent une action antioxydante et sont présents dans une grande variété de fruits et légumes.
