I probiotici sono ingredienti alimentari microbici vivi che hanno effetti benefici sul consumo. Il presente studio ha cercato in campioni di alimenti fermentati potenziali lattobacilli che potrebbero essere utilizzati per lo sviluppo di nuovi probiotici gastrointestinali. Sono stati ottenuti 55 isolati, di cui 46 batterici e 9 di lievito. Sulla base delle proprietà morfologiche e biochimiche, 21 sono stati identificati come Lactobacillus spp. Sono state utilizzate procedure sistematiche per valutare le proprietà probiotiche degli isolati di Lactobacillus, tra cui fermentazione dei carboidrati, autoaggregazione, tolleranza agli acidi, resistenza alla bile e test di tolleranza alla pancreatina. L’85% dei Lactobacillus spp. esaminati ha mostrato la capacità di formare autoaggregazione, il 75% di resistere alla bile e tutti i ceppi sono stati in grado di tollerare la pancreatina.
