Der umfangreiche Einsatz von Tierarzneimitteln bei zur Lebensmittelerzeugung gehaltenen Tieren kann dazu führen, dass sich nach der Verabreichung zur Vorbeugung, Bekämpfung oder Behandlung von Tierkrankheiten oder zur Steigerung der Produktion gewisse Mengen an Arzneimittelrückständen in den Zellen, Geweben, Organen oder essbaren Produkten der Tiere ansammeln, darunter Fleisch, Milch und Milchprodukte, Blut, Eier, Honig usw. Die wichtigste Ursache für das Auftreten von Arzneimittelrückständen in tierischem Gewebe ist eine zu kurze Wartezeit, die dem Abbau des Arzneimittels aus den Lebensmitteln gewährt wird. Rückstände können auch durch unbeabsichtigte Verabreichung von Arzneimitteln oder Lebensmittelzusatzstoffen entstehen. Nahezu alle Arzneimittel, die Tieren absichtlich oder unbeabsichtigt verabreicht werden, führen dazu, dass Spurenrückstände in Lebensmitteln verbleiben. Diese Rückstände haben aus folgenden Gründen erhebliche Auswirkungen auf die öffentliche Gesundheit und die Wirtschaft: Selektion resistenter pathogener und nicht-pathogener Bakterien, Toxizität, allergische Reaktionen, Karzinogenität sowie die Beeinträchtigung bestimmter Lebensmittel. Zum Screening auf Arzneimittelrückstände werden Immunoassays oder mikrobiologische Nachweismethoden eingesetzt, doch zur Bestätigung positiver Ergebnisse sind chromatographische Verfahren erforderlich.
