Le tirosinasi (monofenolo, di-fenolo ossidoreduttasi, EC (1.14.18.1) sono enzimi contenenti rame che catalizzano l’o-idrossilazione dei monofenoli e la successiva ossidazione dei di-fenoli a chinoni. Questi enzimi sono coinvolti nella pigmentazione e sono fattori importanti nella riparazione delle ferite e nella risposta immunitaria primaria. Le tirosinasi si trovano in microrganismi eucarioti e procarioti, invertebrati, mammiferi e piante. Fusarium fa parte della famiglia delle Nectriaceae e rappresenta uno dei generi più importanti dell’ordine delle Hypocreales, grazie all’elevato numero di specie e alla loro importanza pratica. Nei funghi, le tirosinasi sono fondamentalmente associate alla formazione e alla stabilità delle spore, ai meccanismi di difesa e di acredine, all’imbrunimento e alla saturazione. Caratterizzate per la prima volta dal fungo commestibile Agaricus bisporus a causa di problemi di imbrunimento enzimatico indesiderato durante la conservazione post-raccolta, le tirosinasi sono state introdotte, più di recente, in diversi altri funghi con relativi approfondimenti sulle caratteristiche molecolari ed ereditarie e sui meccanismi di reazione, evidenziando le loro proprietà molto promettenti per le operazioni biotecnologiche.
